Boiled Icing Recipe



                 This is a butter free icing recipe for your cakes or cupcakes. This is also called marshmallow icing because it tastes like marshmallow.

Ingredients:
6 pcs egg whites
2 cups sugar
1 calamansi (optional)
¾ cup water
1 tsp cream of tartar
1 tsp vanilla


Procedure:
  • Make the syrup. Put the sugar and the water together in a sauce pan. Add the extract or juice of the calamansi. Boil the syrup until it becomes thick or until it creates thread when a little of the mixture is dropped from a spoon. You can use by treading method by holding a spoon of the mixture high above saucepan.
  • While cooking the syrup, beat the egg whites in a bowl using a mixer. When small bubbles form, add the cream of tartar and continue beating until peaks form.
  • Slowly pour the hot syrup over the beaten egg whites while beating. Continue beating until it becomes fluffy and it holds its shape.
  • Add the vanilla and beat it until blended.

    1. Does it harden or stay soft like marshmallows? Does it allow for pulling into peaks?
